Fanny Kicking Chicken Stir Fry the Wayward Way!

Chicken Stir Fry the Wayward Gourmet Way!Maybe it's the delicious bites of meat, the assorted veggies, or the sauce that holds it all together but stir fry is one of those meals that just makes you feel awesome! It's also the gift that keeps on giving as it makes a great lunch to bring to work the next day. The awesome blend of spices that make up Wayward Gourmet's Chinese Takeout Spice Blend is what really sets this recipe apart from the rest. There are a lot of flavors that make up a traditional "Chinese 5-Spice" in it but with a few additions like ginger, and orange that really take things to a different level (all-natural with no MSG BTW!)  This recipe is extremely easy and lets you experiment with some of the ingredients to make it  your own. You're going to love this.

Here's what you'll need:

  • 1 pound boneless skinless chicken breasts, cut into small pieces, about one square inch
  • 1 cup water
  • 2 tablespoons Wayward Gourmet Chinese Takeout Spice Blend
  • 2 tablespoons vegetable oil, divided in 2
  • 3 cups assorted veggies, cut up into bite-sized pieces (you can use just about any veggie, we especially like carrots, pea pods, broccoli, onion and red peppers)
  • 2 tablespoons soy sauce
  • 4 teaspoons cornstarch

Here's what you do:

  1. Combine Chinese Takeout Blend, cornstarch, soy sauce, and water in small bowl until blended and smooth. Set mixture aside.
  2. HEAT 1 tablespoon of the vegetable oil in a large skillet or wok on medium-high heat. Add veggies and stir-fry for about 3-4 minutes. Remove from skillet.
  3. Pour in remaining vegetable oil into pan. Add chicken and stir fry for about 5 minutes or until cooked through. Return vegetables to skillet.
  4. Pour sauce mixture into skillet (you might want to stir it up before pouring in as the cornstarch has a tendency to sink to the bottom and become goopy.)
  5. Cook everything together for about a minute, just to thicken the sauce and allow everything to blend and become super-duper yummy!

That's it!  You can enjoy this dish by itself or over a bed of white rice or noodles.  You may find yourself wanting to eat it straight from the wok, it's that delicious.  Enjoy!
