Shaved for the Summer Salad
This vinaigrette combined with the thinly sliced magic of summer vegetables makes this a salad that impresses enough by itself, but pairs with your steak and straws to create a perfect summer meal.
To Make the Vinaigrette:
- 1 Tablespoon of Steak Your Claim
- 1 tablespoon chopped shallot
- 1 1/2 teaspoons dijon mustard
- 1 1/2 teaspoons honey
- 3 tablespoons champagne vinegar
- Salt and Pepper to Taste
- 1/4 cup extra-virgin olive oil
- 1 zucchini, cut into 2-inch segments
- 1 yellow squash, cut into 2-inch segments
- 4 baby golden beets, peeled
- 3 large white mushrooms
- 1/3 cup chopped chives
Combine and vigorously whisk the vinaigrette ingredients. (Don’t have a whisk? Put it into an old salad dressing bottle and then shake it like a Polaroid picture.)
Thinly slice all the vegetables into 2 inch strips. This is easier if you have a vegetable peeler or a mandolin, but using a knife and a smidge of patience will work just fine.
Drizzle the thin veggies with the vinaigrette and toss with freshly chopped chives.
Allow to rest in the fridge for 10-15 minutes.
There you have it! Three incredible dishes with one incredible rub. Sure, Steak Your Claim is a miracle worker on any piece of meat, but it is capable of taking other ordinary food item and creating something extraordinary.
