Our recipe is (marginally) healthier than a traditional potato salad as we use Greek yogurt instead of mayonnaise. From prep, to cooking, to eating it takes a total of about an hour and a half. Not that bad considering it makes a gigantic bowl of deliciousness that makes you look like you know what you're doing in the kitchen!
